Kumquat Relish

We spent the Christmas holiday in Louisiana with Maria's family. We were fortunate enough to visit the LSU research orange grove in Plaquemine's parish where we picked a lot of citrus, including kumquats which James turned into this sumptuous relish. Many of the orchards were destroyed by Katrina, but some, like this one, were spared. The cow was one of several bovines washed over the levee into the orchard. Many cows survived, yet no bulls did.
